The first six steps to making homemade noodles.

Noodle Ingredients

#1 – Place two cups of all-purpose flour into a bowl. Next, add 1 teaspoon salt. Stir the salt into the flour.

#2 – Use a spoon to make a well in the flour mixture.

#3 – Place 3 whole eggs + 1 egg yolk in the center. Add half of an eggshell filled with water.

#4 – Gently and gradually begin stirring the flour into the eggs.

#5 – Continue to gradually incorporate the flour into the egg mixture.

#6 – The mixture will start to thicken as you continue the process.

The second six steps to homemade noodles.

Making the Dough for Homemade Noodles

#1 – At this stage, the flour is mostly incorporated and the mixture is crumbly.

#2 – Sprinkle flour onto a clean, dry working surface.

#3 – Scrap the dough onto the floured working space.

#4 – Knead the dough. Continue adding flour in small increments until the dough is soft and pliable. Make a round ball.

#5 – Cover the ball of dough with a clean kitchen towel. (We like using a kitchen flour sack dishtowel because it's thin and allows air to pass through freely.) Let the dough rest for 30 to 40 minutes.

The third set of steps to making homemade noodles.

Rolling Out the Noodle Dough

#1 – After the dough has rested, lightly sprinkle your working surface with flour again. Next, cut the dough in half (or fourths if you have a small amount of workspace).

#2 – Separate the halves and set one aside.

#3 – Lightly sprinkle the top and bottom of the dough with flour. Using a rolling pin begin to roll the dough out.

#4 – In order to keep your rolling pin from sticking to the dough continue adding a dusting of flour to the surface of the dough.

#5 – Continue the process until the dough is the thickness you desire.

#6 – My 88-year-old mother prefers her homemade noodles on the thin side. Therefore, we rolled our dough out to 1/4-inch thickness and thin enough to see our hand through it. (Remember – the thicker the noodle the more cooking time is required.)

Cutting homemade noodles.

Cutting Homemade Noodles

#1 – Repeat the process for the second segment of dough. Again, cover each with a clean kitchen towel. Let rest for a minimum of 1 hour or until the dough is dry and not sticky.

#2 – Remove the towel. Use either a sharp knife or a pizza cutter to cut the dough into strips. Try to make the strips the same width.

#3 – Separate the strips.

#4 – Begin stacking the strips of dough. We don't recommend making your stack higher than 5 to 6 strips high. If your stack is too high it's harder to cut the noodles uniformly.

#5 – Place the stack of dough onto a cutting board. Don't worry if the stack isn't perfect. Just try to line each strip up as much as possible.

#6 – Use a sharp knife to cut the strips into noodles. You can make the width as thin or as thick as you want. Just try to make them as uniform as you can. That way the noodles cook at the same rate.

Prep Time: 30 minutes

Cook Time: 45 minutes

Additional Time: 2 hours

Total Time: 3 hours 15 minutes

These old-fashioned homemade noodles are just like what grandma used to make. Simply cook them in broth and serve or use them in soups and pasta dishes.

Continue the process until the dough is the thickness you desire. Repeat the process for the second segment of dough.
  4. Cover both of the rolled-out dough with clean kitchen towels. Let rest for a minimum of 1 hour or until dough is dry and not sticky. Remove the towels. Use a sharp knife or pizza cutter to cut the dough into equal width strips. Separate and stack strips of dough, no higher than 5 to 6 strips high. (If you get too high of a stack it's harder to cut the noodles uniformly.) Place the stacked dough onto a cutting board. (Don't worry if the stack isn't perfect. Just try to line each strip up as much as possible.) Use a sharp knife to cut into noodles. You can make the width as thin or as thick as you want. Just try to make them as uniform as you can.

Notes

If you aren't using the noodles right away we recommend placing them in freezer baggies and freezing them for use later. There aren't any preservatives in the noodles and therefore freezing prevents any mold from forming. It also ensures that bugs do not get into the noodles. Simply thaw the desired amount of frozen noodles you want whenever you need them.

Versatile Noodles

You can imagine how wonderful old-fashioned homemade noodles are in homemade chicken noodle soup and in various pasta dishes. They are also fabulous simply cooked in chicken broth or beef broth (think Thanksgiving!).

NOTE: If you aren't using the noodles right away we recommend placing them in freezer baggies for use later. Since there are no preservatives in the noodles, freezing prevents any mold from forming. It also ensures that bugs do not get into the noodles. Simply thaw the desired amount of frozen noodles you want whenever you need them.
